Trainee Bakery Manager – Pick n Pay Careers

Job Purpose

  • Manage bakery resources to maximise turnover and minimise shortages.
  • Ensure all standards, processes, and policies are consistently adhered to.

Minimum Requirements

  • Matric / Grade 12
  • NQF 3 Bakery qualification (preferred)
  • Minimum 3 years’ baking experience
  • Experience as a Baker or Bakery Supervisor
  • Willingness to be transferred between stores
  • Ability to perform additional duties as required

Key Responsibilities

Merchandising Management

  • Conduct regular quality checks on merchandise
  • Execute planograms 100% according to guidelines
  • Handle products in line with SOP requirements
  • Ensure products are produced to recipe specifications
  • Prepare the department for trade before store opening
  • Identify fast-selling lines and assess impact on margin and sales opportunities
  • Ensure products are wrapped and packed according to standards
  • Maintain sufficient stock levels to meet customer demand
  • Ensure compliance with hygiene, housekeeping, and safe working standards
  • Monitor implementation of all promotional activities
  • Keep back-up areas clean and organised
  • Rotate stock and manage sell-by dates according to policy/SOP
  • Maintain merchandising and cleanliness standards throughout the day while minimising waste

Food Safety & Hygiene

  • Maintain hygiene and housekeeping standards
  • Ensure correct stock rotation
  • Monitor compliance with food safety and health & safety standards
  • Manage non-conformances through corrective actions
  • Implement cleaning schedules and verify sanitation effectiveness
  • Complete and record the Food Safety Daily Checklist

Customer Service Management

  • Respond to customer requests promptly
  • Manage out-of-stock queries, offer alternatives, and explain delivery timelines
  • Ensure department standards are maintained and equipment is fully operational

Staff Management

  • Communicate critical information to staff
  • Set targets, priorities, and delegate tasks effectively
  • Address procedural, policy, and legislative non-compliance
  • Attend monthly regional meetings and relay information to staff
  • Respond to queries on turnover and waste management
  • Review and adjust Kronos scheduling as required
  • Coach, guide, and develop staff

Administration

  • Ensure all equipment is properly maintained and functional
  • Maintain general maintenance standards
  • Monitor waste and ensure procedures are followed
  • Track turnover, identify growth opportunities, and resolve barriers to achieving budgets
  • Ensure all SELs are current, printed, and clearly visible to customers

Systems & Reporting

  • Conduct gap scanning to identify out-of-stocks
  • Identify, count, and record out-of-stocks and over-stocks
  • Generate Excel reports from SAP and communicate stock concerns to Demand Planning
  • Process IDTs via SAP according to procedures
  • Action reduced-to-clear on SAP as per SOP
  • Monitor electronic communications throughout the day
  • Process waste according to company procedures
  • Ensure PIDs are counted accurately according to the National P&L schedule
