Role Overview
The Trainee Bakery Manager is a developmental role aimed at equipping an experienced baker with the skills, knowledge, and leadership capability required to progress into a Bakery Manager position. This role provides hands-on exposure to bakery operations, people management, and commercial performance, while ensuring consistent adherence to company standards, policies, and procedures.
Minimum Requirements
- Matric / Grade 12 qualification.
- Qualified Baker certification.
- Minimum of 2 years’ experience in a bakery production environment.
- Previous supervisory experience is advantageous.
- Willingness to work shifts, weekends, and public holidays.

Key Responsibilities
Operational & Resource Management
- Manage resources efficiently to maximise turnover and minimise shortages.
- Ensure strict adherence to company standards, policies, and procedures.
- Maintain high levels of hygiene, housekeeping, and safe working practices.
- Enforce security and loss prevention procedures at all times.
Production & Stock Control
- Plan, coordinate, and control daily, weekly, and monthly bakery production in line with company specifications.
- Order, manage, and control stock levels to support production and reduce waste.
- Monitor product quality, freshness, and consistency through regular checks.
- Implement controls to prevent wastage, shrinkage, and damages.
Financial & Administrative Control
- Monitor and control departmental expenses in line with agreed targets.
- Complete all administrative tasks accurately and within required timelines, including staff scheduling, leave administration, pricing, and cost controls.
- Analyse departmental performance and profitability, taking corrective action where necessary.
Customer Service Excellence
- Ensure consistent service delivery and product quality for all customers.
- Engage customers proactively, provide product advice, and address customer needs effectively.
- Uphold a strong customer-centric culture within the bakery department.
People Management & Development
- Support, guide, and motivate bakery staff to maintain high performance standards.
- Ensure staff are competent, engaged, and aligned with business expectations.
- Participate actively in all required training and development programmes to support career progression.
